Our Beer

Unfortunately we’re kind of selfish when it comes to brewing. We brew styles that pique our own interests and allow us to learn more about our craft. But what we strive for is to make sure there’s something for everyone in this ADHD-approach to beer making. Most beers listed below will not be available all the time, but as we continue to evolve as a brewery, you’ll see many of these reappear, along with exciting new releases. Maintaining the fun part about brewing is important to us, so we try not to get too tied down to any particular styles or brands.

Hoppy American Pale Ale made with our friends from Sante Adairius Rustic Ales, only 38 miles up the coast! This beer is an expression of both our breweries - we combined yeast strains and picked out some of our favorite hops. The result a balanced impression of pine & citrus hop character with tropical overtones and a creamy mouthfeel.

Hoppy Lager

Collaboration with our friends at Altamont Beer Works! A golden, Oktoberfest-inspired lager with a heavy dry hop that includes Citra, Mosaic & 07270. We fermented ours with a house lager strain, while Altamont took the same recipe and used an ale strain so that people can see the impact yeast can make with hoppy beer.

Delorean, Lamborghini....and now Isuzu. Amigo that is, 1992 to be exact. The next in our unofficial "car" series is dedicated to brewer Kevin Brown's insanely radical ride. Elegant fermentation character, dank hops, heirloom floor malted British barley for body and balance.

American Black Ale

Don't judge a book by it's cover! It may look dark, but it's actually quite hoppy and the roasty flavors you would normally associate with a beer this color are largely absent. Mosaic hops add a tropical element with moderate bitterness to create a balanced, drinkable Black ale.

Yeast-Driven Double IPA

Collaboration Double IPA with our Oxnard pals, Casa Agria Specialty Ales. A beautiful grist bill that includes a large percentage of Optic heirloom British base malt as well as a solid helping of flaked rye establishes a soft, biscuity background to layer hops. An arsenal of hops, that is. We chose some of our favorites: Vic Secret, Mosaic, El Dorado, Denali & Eureka. Result yields aromatics and flavors of strawberry, pineapple, honeydew melon and an underlying dankness reminiscent of fresh, purple nugs.

Hoppy Mexican Lager

This is a hoppy Mexican lager, inspired by a San Diego garage homebrew recipe from 2011. Bitterness is light and crisp, but hop aroma & flavor are front and center. We overuse the word “tropical”, but there’s really no better way to describe Citraveza, as the interaction between the lager yeast and these hops make for a truly unique beer.

Yeast Driven IPA

Formerly known as "hop juice", this IPA has been fermented with a peachy, stone-fruit heavy yeast strain that complements the melon and candy-like notes of El Dorado hops. Citra and Azacca bring in a layer of tropical fruit and rounds out the citrusy character. Low bitterness and emphasis on flavor and aroma additions, along with high protein adjuncts like flaked oats give the mouthfeel a juicy texture.

Double India Pale Ale

Double IPA fermented with a formerly classified Brettanomyces yeast strain that produces intense tropical aromas and flavors. We augment these yeast esters with Citra, Mosaic, and touch of Galaxy in the dry hop, resulting in a total juice bomb. It also has a beautiful orangey haze, and creamy mouthfeel from the addition of flaked oats.

Hybrid East Coast/ West Coast style DIPA

A new Double IPA we were attempting to make more in the West Coast-style, but it came out pretty hazy, and quite frankly, pretty damn juicy too. Fermented with a yeast strain that's new to us, it's definitely on the fruitier side but has a firm, West Coast-style bitterness and finishes very dry. Name is a pun off Cool Runnings, of course, and relates to the "runoff" process when lautering into the brew kettle.

Yeast-Driven Double IPA

If Doc Brown were to jump in his time machine on a quest to drink a Double IPA in 2017, this would certainly be his beer! A modern take on the ever changing IPA style. We've combined forces from two of our favorite yeasts, Saccharomyces Trois (Contains No Juice) and Vermont ale (Riot Punch) to squeeze out as much pulpy, tropical-fruit laden ester character as possible, THEN introduced a not-so small amount of cryo powder in the dry hop to further augment an oily, luscious hop aroma and flavor. Soft, silky texture, light bitterness, high drinkability.

“Hop Bomb” would be cliché to describe this beer. It goes way beyond that – intense aromas of pineapple, freshly crushed gooseberry, orange pith and the whole spectrum of “dank” blast through the glass. That’s what you get with nearly five pounds per barrel of Nelson, Mosaic, and Citra hops.

Named after Duane, the owner of Bottom's Up Homebrew Supply in Seaside, this West Coast style IPA is massively dry hopped with New Zealand Nelson Sauvin, and Mosaic wet hops, lending huge aromas and flavors of lychee, gooseberry, and mango, with an underlying earthy, diesel dankness! Party time, excellent!

Enjoy this rather hazy interpretation of what we think is a damn delicious hoppy pale ale.

Collaboration Double IPA with Pure Project, brewed with local Monterey county honey and rye malt from a farm in SLO. Very intense tropical aromas of mango and passionfruit along with a pronounced floral note from the honey added towards the end of fermentation.

One whiff and you get super intense notes of passion fruit, mango, and lychee. Grain bill of just American two-row malt and a clean fermentation keep it simple and allow these hops to shine.

West Coast IPA

Hop hazed and incredibly juicy, this was our first ever brewed IPA and remains our top selling beer and local favorite at our Monterey brewpub. It’s brewed with 100% British Maris Otter pale malt as it’s base, which contributes a creamy texture and a tad more body than your typical dry, West Coast IPA. As with most of our hoppy beers, a majority of the bitterness comes directly from whirlpool additions in the boil, with the intent of maximizing hop aroma & flavor. Minesweeper is dry hopped excessively with Simcoe and Citra hops.

Wet Hop India Pale Lager

Our very first packaged wet hop beer in the form of an IPL. We started with locally harvested Cascade on the hot side, and later stuffed our lager tank with a heaping of Simcoe flowers that were overnight shipped from the Yakima Valley in Washington. Incredibly fruity (tropical) and resinous aroma, massive green hop flavor, dry and crisp finish in lager fashion.

Alcohol is subdued, mouthfeel is full and soft, light bitterness.

The addition of Oregon estate heirloom barley from Mecca Grade Malting and a sizable portion of Spelt gives it a pillowy, chewy texture.

Five progressive hop varieties combine with a unique fermentation profile to achieve notes of honeydew melon, cantaloupe, berry & white grape. Nothing Spooky about it, other than the can art.

Bright, peach heavy tones from an East Coast yeast strain fermentation and a dry hop of Citra & Amarillo. The result is a hop aroma and flavor chock full of ripe, juicy grapefruit and apricot jam. On the back end, we've loaded up with beer with lots of oats, so it has a soft, creamy texture to support mild hop bitterness.

ABV 7% | 40 IBU

No jet ski necessary to indulge in the tropical bliss squeezed out of the hop oils in this double IPA. Enhanced by a colorful yeast strain that hones in on the Simcoe and Mosaic hops and turns them into magic. Chewy, silky body courtesy of Mecca Grade Wickiyup hard red wheat from Oregon.

Inspired by frothing groms that attempt to "shred" Wharf #2 on massive swells, this cousin of our West Coast-style Local Shred Red is fermented with a juicy yeast strain that loves fruit-forward and dank hops. One could say it's a New England-style interpretation of a American Red Ale. No specialty malts, all color is derived from Belgian candi sugar.

Brewed for the 30th Anniversary of Toronado San Francisco. We took one of our favorite hops, Simcoe, and made it shine through in new ways with the fermentation character of a very expressive blend of yeasts. A doughy, firm malt base established by 100% Maris Otter malt provides a doughy balance, and provides a soft texture.

We'll never be your yeast of burden. In the age of hazy & juicy hop forward beers, the yeast often goes unrecognized but is largely the reason for the character of these beers. A gorgeous grain bill that includes locally malted Sacramento Valley barley, and a intensely citrus-forward hop aroma augmented by tropical, yeast derived esters.

Single hop, experimental IPA with the goal of understanding how yeast esters impact different types of hops. Current batch (11.18) uses Ekuanot (formerly Equinox) which, in conjuction with the yeast, produces melon, lime, papaya, berry, and pine notes in the nose and on the palate.
